You're Pudding Me On

Another yummy treat that I made from the Looney Spoons Collection Cookbook from Janet & Greta Podleski.

Now this was one yummy treat made a little healthier by using 100% whole wheat bread (recipe says multi-grain) and I always use dark chocolate as it's better for you and I love dark chocolate. The whole family loved this one and they didn't know it was made with whole wheat bread so why tell them? It's our little secret.

  • 10 to 12 large slices of multigrain (or whole wheat) bread (about 1lb/454g)
  • 2 cups 2% milk
  • 2 cups mashed ripe bananas
  • 1 cup vanilla flavored yogurt
  • 4 eggs lightly beaten
  • ¾ cup packed brown sugar
  • 1 teaspoon each vanilla & ground cinnamon
  • ¾ cup semi-sweet chocolate chips
  • ⅔ cup chopped pecans (optional we skipped the pecans)

Break bread into 1-inch pieces and place in a 9x13 inch glass baking dish (I didn't have glass as you can see in the picture) that has been sprayed with cooking spray. Dish should be full.

In a large bowl whisk together milk, bananas, yogurt, eggs, brown sugar, vanilla and cinnamon. Pour mixture over bread. Using your hands (yep it gets messy), mix bread cubes with milk mixture so that all pieces are coated. Let stand for 15 minutes while you preheat oven to 350 degrees F.

Just before popping dish into oven, mix in most of the chocolate chips and pecans, saving a little of each to sprinkle on top. Now, go ahead and sprinkle on top!

Bake for 50 to 55 minutes, until pudding is puffed up and golden brown and center is set. Remove from oven and let stand for 10 minutes before serving. You can cut the dessert into squares and serve it on a plate or spoon it into dessert bowls. If you feel like splurging, serve the sliced version with a small scoop of vanilla ice cream or frozen yogurt and the spooned version with  drizzle of real whip cream! Makes 12 servings.

There's only 3 of us in the house so this was a huge amount of pudding but we managed somehow to eat it all. We even tried it with the ice cream very rich but oh so yummy!

There you have it a delicious dessert this would be perfect if you're having a large group of people over of if you want dessert for several days 🙂 We and our tummies thoroughly enjoyed this dessert!

  1. Thanks so much for the Terrific Recipe on You’re Pudding Me On! I really love bread pudding, however, I'm the only one in the house that will eat it! Whenever you make a bread pudding, it makes soooo much and that's why I don't make it very much! I have been craving it a lot lately, but, I have to make sure that I can share it with someone! I forget now what website I saw it on, but someone had a recipe for bread pudding, however, it was made with left over glazed donuts! It sounds terrific but oh so bad for you! Thanks for sharing your recipe with all of us! I absolutely love it! Thanks again! Michele 🙂

  6. I've never made anything like this before but I sure would like to! It looks delicious and as far as desserts are concerned, it looks better for you than the normal chocolate cake or cookies I normally eat way too much of!

  8. Can anyone say YUM!!! Your photo's and the ingredients has made me slobber, lol. Seriously, thank you for sharing this recipe. I've been surfing the web, looking for an appealing Pumpkin Cheese Cake and now I have found one. This is going to make me very popular come Thanksgiving. You made it sound so simple but yet looks so darn good that it couldn't be. Will send you a photo of mine because I know I will be making one before Thanksgiving so I'll share back with you.   10. My silly husband bought way too many bananas the other day. There's no way we'll be able to eat them all before they get too brown. I'm gonna try this when they get ripe. It sounds really good 🙂

  11. Thanks for the recipe.

    I'm not a huge fan of bread pudding, but wanted to try something new for my daughter to try. We are so opposites on desserts. I live for chocolate! But, this was very delicious.

    I could only put chocolate chips and nuts on about 1/2 or my daughter wouldn't eat it. If or when I make it again I'll increase the cinnamon. It wasn't enough in it for my taste. I used 1% milk (which is what we buy). I also used walnuts instead of pecans because that's the nut of my choice lol. I liked leaving some of the bananas sort of chunky too.
