Powered by Mom’s Healthy Mug Cake (but oh so yummy) Recipe – Paleo Cinnamon Coffee Mug Cake
I admit I love mug cakes because they are so quick to make and it’s one way to satisfy my sweet craving. I also love it when they are gluten-free so that I can avoid that gluten bloat. Most of all though I want the mug cake to be tasty so lucky me that this healthy mug cake gives me everything I need and don’t need in a recipe. I think you will love how flavourful and moist this Paleo Cinnamon Coffee Mug Cake is and you will definitely love that you can have it ready in five minutes or less.
While I do love pumpkin and fall is the season for pumpkin everything I decided for one of my first fall dessert recipes that I wanted something besides pumpkin. Another fall favourite of mine is cinnamon coffee cake but oh the sugar and calories in such a cake is enough to make one go into a sugar coma. So I decided it was time to get creative and try something gluten-free.
Since our Gluten-Free Chocolate Mug Cake was so popular and seriously sinfully delicious I decided we needed to do another gluten-free one but this time we made one with almond flour. Between the fragrant cinnamon, coconut palm sugar, coconut oil and the vanilla this healthy mug cake smells and tastes like heaven. As you can see below we just need some simple, wholesome ingredients and we’re good to go.

A Healthy Mug Cake-Paleo Cinnamon Coffee
- Prep Time: 2 mins
- Cook Time: 2 mins
- Total Time: 4 mins
- Yield: 1 1x

Ingredients
- 4 tablespoons of Almond Flour
- 1 tablespoon of Coconut Palm Sugar
- ½ teaspoon of Baking Soda
- 2 tablespoons of Melted Coconut Oil
- 1 large Egg
- 1 teaspoon of ground Cinnamon
- 1 teaspoon of Pure Vanilla Extract
- A pinch of Sea Salt
- Whipped Coconut Cream (optional)
Instructions
- Mix all the ingredients in a large cappuccino mug.
- Microwave for 2 minutes on high.
- Let it cool for 5 minutes.
- Top with whipped coconut cream and a dash of cinnamon.
Notes
The cooking time will vary based on the microwave. It takes exactly 2 minutes for a 1200W microwave oven. Do not overcook, or you’ll end up with a rubbery cake.
