It’s football season and soon it’ll be the holiday. Which can only mean one thing, parties and family gatherings? I don’t play hostess very often, but I do like to make snacks for my kids and husband. We watch football and always need something yummy to eat while we cheer on our team.
I took several different things and threw them together one day, earning a “Yum! MOM!” from everyone in my house. To start, I looked in my pantry and refrigerator to see what I had available. I found a can of white meat chicken, a block of cream cheese, some bacon, some shredded cheese and a packet of ranch dressing mix. Sounds a little weird, I know, but it turned out so good, that I have to share it.
Draining the chicken in a food strainer helps to ensure that you get all the fluid out. Another option would be a store bought rotisserie chicken, pulled off the bone. You don’t need a lot, that is why I used canned chicken.
Also, make sure the cream cheese is at room temperature. This makes the cheese easier to work with. Nothing I dislike more than ingredients that don’t mix easily.
Using my stand mixer and paddle attachment, which is the best for this recipe. I put the chicken and the cream cheese in the bowl and turned it on. Then I placed a heaping 1/4 cup measuring spoon of shredded cheese in the mixer. You can use whatever cheese you like. On this game day, I used a Colby and American blend, with sharp cheddar for the top.
Add the ranch dressing mix (power only…please don’t use liquid ranch for this recipe…it won’t turn out the same). Also, add the cooked bacon. (tip: chop bacon before cooking and it looks more uniform and it’s easier than chopping after cooking.) Continue to mix until it’s all incorporated and smooth.
Put the mixture into a baking dish, smoothing it evenly in the dish. Top with cheese (on this day, I used sharp cheddar) and bacon crumbles.
Bake dip at 425 degrees for 15 minutes, then broil for an additional 5 minutes to brown the top.
