Delicious Carrot Cake Blondies Recipe
Carrot cake lovers these Carrot Cake Blondies are for you! All the yumminess of a carrot cake but oh so easy to make and the sweetness of brown sugar (hence the blondies part). They are oh so delicious and moist and full of shredded carrots, delightful spices, and topped with a cream cheese frosting of course!
These carrot cake blondies are soft but a bit denser than carrot cake and taste oh so delicious. They did not last long in our home so beware they are a popular treat for carrot cake lovers and who could resist cream cheese frosting? Not me apparently!
What are blondies?
A blondie (also known as a blonde brownie) is a rich, sweet dessert bar. It resembles the traditional chocolate brownie, but substitutes vanilla for the cocoa used in brownies,[1] and contains brown sugar. Blondies are made from flour, brown sugar, butter, eggs, baking powder, and vanilla, and may also
contain walnuts or pecans. Blondies differ from white chocolate brownies. Unlike the white chocolate brownie or the normal brownie, they contain no chocolate or chocolate flavouring, other than chocolate chips, which may be included. They may also contain coconut, nuts, toffee, or any other chunky candy for added texture. Blondies are not usually frosted; the brown sugar tends to be sweet enough
Besides tasting oh so amazing these carrot cake blondies don't take a lot of time to make. They only take about 10 minutes to prep and are in the oven for 30-35 minutes. You let them cool and then you top them with an oh so scrumptious cream cheese frosting. I might have just drooled there a bit thinking about it.

- Cinnamon

- Icing sugar
- Milk
- Vanilla
- 9x9 pan

Carrot Cake Blondies Recipe
Ingredients
- ½ cup of butter
- ½ cup of brown sugar
- 2 eggs
- 1.25 cups of flour
- 1 teaspoon cinnamon
- ½ cup of chopped walnuts
- 1 medium carrot grated
Cream Cheese icing
- 4 oz block of cream cheese
- 5 cups icing sugar
- 2 tablespoon milk (you may need to add more depending on consistency)
- 1 teaspoon vanilla
Instructions
- Mix flour and cinnamon and set aside
- Mix wet ingredients until combined
- Pour flour mixture into the wet ingredients.
- Fold in grated carrots and walnuts.
- Scoop mixture into a 9x9 pan and bake at 325 for 30-35 minutes. A toothpick should come out clean.
- Mix cream cheese, icing sugar, vanilla and milk until you have a smooth icing. When bars are cooled, frost the cake.
- *Garnish with grated carrots and walnuts.
Notes
* instead of (or with up to you) shredded carrots you can add sprinkles of any colour and style that you prefer
* Can you skip the nuts? Yes, some people like raisins with or instead of nuts or you can skip the nuts and not substitute with anything.

Now how easy does it look to make these carrot cake blondies? Easy right? I am practically dreaming of them and that cream cheese frosting. I also sometimes dust the frosting with a bit of cinnamon as I love cinnamon.
I like the shredded carrots on top but you can also skip those and have nothing on top, just the crushed walnuts, or as mentioned on the recipe card some fun sprinkles could also work!
I also personally love raisins in these carrot cake blondies or even carrot cake but sadly the rest of the family doesn't love raisins. Hmm maybe I should make a whole pan of ones with raisins and then I would have a whole pan to myself! Would that be too greedy? Maybe just a little but it might be the only way I get more than one piece of carrot cake blondies because these babies go fast!
Would you add nuts, raisins or? To these carrot cake blondies? I think they would also taste fabulous with some toasted coconut in them or on top of the cream cheese frosting! Yum!
