Summer is almost here and there's nothing that says summer like a backyard get together. We have fond memories of all the backyard shindigs at our home and friends and family and of course all the food. One of our favourite things to make and eat are kebabs, they are so versatile, add chicken, add veggies, whatever you want and of course seasoning. A new favourite are these chicken kebabs with Za'atar Recipe. What is Za'atar you might ask?chicken kebabs with za'atar recipe - middle east spices

Let me tell you this Chicken Kebabs with Za'atar Recipe is about to become your new favourite. Even better the Za'atar spice mix can be used on oh so many things from all your favourite veggies to other proteins too! Za'atar is a generic name used in the Middle East for an amazing blend of herbs. Usually it's a blend of dried thyme, oregano, marjoram, sumac, toasted sesame seeds, and salt. Like many ancient spice blends there are always variations and ours does have a slight variation. If you can't find Za'atar in a market near you for our Chicken Kebabs Za'atar recipe, you can easily blend your own and keep it in a jar to use whenever you want and you will want to use it a lot!zaatar spice recipeAs a side note "kebab" is the original wording usually as "shish kebab" but a lot of times here in North American it is referred to as kabob. Either way it's tantalizing chunks of meat on a stick and when you try our chicken kebabs with za'atar recipe you'll be in love. Feel free to add veggies onto your kebab for that grilled taste but this time we went with all chicken and served it on a bed of refreshing veggies for a yummy pairing. chicken farmers logo

Not only that but Canadian chicken is raised here in Canada according to nationally-set, mandatory food safety and animal care standards. We may be carnivores but we believe in these care standards.

Chicken Kebabs with Za'atar Recipe

Take your backyard or inside shindigs to a whole other level with this delectable Chicken Kebabs with Za'atar Recipe. The blend of aromatic spices with the grilled chicken is amazing and sure to please. After all who doesn't love easy to eat but oh so yummy food?!

Cook Time 10 minutes
Total Time 10 minutes

Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 6 tablespoons olive oil, divided
  • 3 tablespoons za’atar seasoning
  • 8 roma tomatoes, finely diced
  • 2 large English cucumber, finely diced
  • 1 cup flat-leaf parsley, roughly chopped
  • 1 cup fresh mint, roughly chopped
  • Juice from 1 lemon
  • 1 ½ teaspoons kosher salt
  • For the Za'atar Seasoning (if you want to make your own you’ll have extra to use later)
  • 6 tablespoon ground sumac
  • 6 tablespoon dried thyme
  • 6 tablespoon sesame seeds toasted
  • 3 tablespoon kosher salt
  • 1 tablespoon ground cumin

Instructions

  1. Soak kebab skewers in water for 30 minutes before cooking.
  2. Cut chicken breast into 1-inch cubes and place in a large bowl. Add 3 tablespoons olive oil and the za’atar seasoning and toss to coat. Let marinate for a few minutes, then place 5 or 6 pieces on each skewer.
  3. In a large bowl, add the tomatoes, cucumber, parsley, and mint. Add the lemon juice and remaining 3 tablespoons olive oil, then sprinkle with salt. Toss to combine and set aside.
  4. Prepare a grill to high heat and brush the grates with oil. Place the skewers over direct heat and cook on each side for 2 minutes, until thoroughly cooked. Serve on top of Israeli salad with a side of hummus.

Notes

Store the leftover Za'atar spice blend in a jar and use later on grilled or baked veggies like carrots! So delicious
