Of course, if we had just topped them with strawberries and raspberries they could be great for Canada Day. Delicious and Easy Crepes Anytime

I've always loved crepes but I have to confess this is the first time we've made them. Now I'm wondering why we didn't we make them before?! Another confession, the only reason we made most of them, actually my daughter made them was she had to do it as part of her Foods class at school. Crepes are delicious to serve for dessert, breakfast or special occasions. I am so happy these crepes were my daughter's food assignment. Now we know how easy it is to make crepes and while I'm sure a crepe pan and crepe spreader and flat turner would all make it even easier you can do it without them as we did. I do love savoury ones but sweet ones are my favourite and it seems my husband and daughter feel the same way.Serve these delicious and easy crepes for dessert, breakfast or special occasions. Even dinner for savory crepes!

What toppings go on this French crepes recipe?

We topped off our crepes with strawberries, blueberries some powdered sugar, and a bit of maple syrup. Oh my gosh, they were so good we had them for dessert.  One of my favorite things about this recipe is that it is super versatile.  You can truly top them with any sweet or savory topping you like.

Some ideas for sweet toppings:

  • Fresh fruit such as berries, pineapple, mango, peaches, or pears
  • Pie fillings such as apple pie, peach pie, blueberry pie, or cherry pie
  • Maple syrup, chocolate syrup, honey, molasses, or fruit syrups
  • James, jellies, compotes, and preserves
  • Chopped nuts, chocolate chips, shredded coconut, or even marshmallows

Crepes are delicious to serve for dessert, breakfast or special occasions. Even dinner for savory crepes!

What are some fillings for crepes recipe?

If you want to turn your crepes into something savory, add a savory blend of cheeses.  Ham and cheese are always a hit, but you may also like something such as bacon and eggs inside them.  Of course, I love a spread of goat cheese or a herbed cheese like Boursin.

For sweet treats, you can add peanut butter, Nutella, or any other spread you prefer.  Then top with the sweets and syrups recommended above.

What goes in an easy crepe recipe?

One of my favorite things about making crepes is that they are super easy to make with items you already have on hand.  Of course, a crepe pan is nice to have, but otherwise, the ingredients are likely already in your pantry!

  • Flour
  • Salt
  • Sugar
  • Eggs
  • Milk
  • Vanilla extract
  • Butter

Delicious and Easy Crepes Recipe

Follow this recipe for delicious Easy Crepes! A perfect breakfast, brunch, or dessert option you can fill with berries and cream or a savory filling.

Prep Time 5 minutes
Cook Time 20 minutes
Inactive Time 30 minutes
Total Time 1 hour 30 minutes

Ingredients

  • 1 cup all-purpose flour
  • ⅛ teaspoon salt
  • 2 tablespoons granulated white sugar
  • 2 large eggs (room temperature)
  • 1 ¼ cup milk (room temperature)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter, room temperature (still liquid)

Instructions

  1. Place all ingredients in your blender or food processor (we used a blender and it works great) and process for about 15-30 seconds or until smooth. (The batter should have the consistency of light cream.).
  2. Cover and let it sit at room temperature about 15-30 minutes. Or place in the refrigerator to chill for one hour, or up to two days. After chilling the batter, if it's become too thick, thin it out with a little milk or water.
  3. Heat a 9-inch non-stick frying pan over medium heat until a few drops of water dropped on the pan slightly sizzle. Adjust the temperature as needed.
  4. Lightly butter the pan, just enough to coat it.
  5. Lift the pan from the heat and, pour about 3-4 tablespoons of the batter into the center of the hot pan. We used a small batter scoop.
  6. Tilt and swirl the pan so the batter forms an even layer (don’t worry about making it a perfect circle).
  7. Cook until the edges of the Crêpes start to curl and the top looks almost dry (about 1-2 minutes).
  8. (The bottom of the Crêpe will have get a golden brown lacy pattern.) Flip the Crêpe and continue to cook for about 15-30 seconds or until you have golden brown spots over the surface.
  9. Remove from heat and place on a plate. Continue to cook and stack the Crêpes

Notes

We ended up refrigerating our batter overnight as we ran out of time when we first started. The crepes still came out beautifully.

Add your favourite fruits or jams. We thought about adding whipped cream but the crepes were so good with the berries, powdered sugar and maple syrup that whipped cream was not needed.

If you want to make savoury crepes, skip the vanilla and add less sugar or skip the sugar.
You can also freeze the crepes.Stack and wrap in aluminum foil or plastic wrap and refrigerate for a couple of days or freeze up until 1 month.

Can you make crepes ahead of time?

Yes!  While they are a bit time consuming to prepare, they are worth the effort.  I like to make a larger batch and enjoy them over 2 to 3 days.  They are best served within 3 days of cooking.  Just make sure you store them in an airtight container in the refrigerator.

Can you freeze homemade crepes?

Yes!  I recommend separating them with waxed paper between each crepe to make it easier to use after thawing.  They are good for up to 2 months in the freezer.

Do you have to use a special crepe pan?

No.  Admittedly, a crepe pan does make this a bit easier, you can make crepes in any larger skillet or griddle.  You may have more difficulty removing them in a traditional skillet.  The low sides of a classic crepe pan make this easy to accomplish.

  2. I remember first learning about crepes from the Nickelodeon kids’ show, “Today’s Special”. Coincidentally, it’s a Canadian program! I’d get so excited when my my mom would bring crepes home from take-out. I have tried chocolate, peach, plum, and pumpkin spice. I love how they are so delicate and yet quite filling, I’ll bet this will be fun to make. Plus, beautiful presentation!

  3. I have never made a crepe BUT I have watched it on cooking shows. Special pans, round turn table with a long stick just kinda made me feel it was a lot of work. BUT if I kid can make them I should be able to! So I am going to try 🙂

  13. I absolutely love crepes. When I was in Paris visiting a friend I found out that they add rum to their batter and let it sit in the refrigerator overnight. It was the best crepes I've ever had. I'll definitely have to try your recipe (maybe with a little rum though 🙂

  14. Two things I've never tried making - souffle and crepes. I am intimidated by both, but you give me hope for the crepes at least. You seem to have conquered them, so I guess I can give them a shot. Not too many ingredients and nothing I don't already have at home, so....wish me luck...hope I do as well as you did.

  15. My family loves crepes make them every time the family gets together for holidays for breakfest and I always make extra the grandchildren eat them for a snack. Spread a little jelly and peanut butter roll it up and they are off playing with crepe in hand...lol gonna try this apple recipe this weekend when they come for Easter .

  17. Crepes are scary to make, lol. Eight years of French classes and making them for a grade (usually a D) had me not trying them since high school. But I think I will again.

  25. My fiance loves crepes! I do make them for him but to me they always come out sticky and I am not sure what I am doing wrong.   30. I grew up eating and then making crepes myself. My mother made them and we used to eat them on pancake day with lemon juice and sugar, simply heavenly. 🙂 Now I often eat them with maple syrup too, also very yummy.

  31. I have ordered a lot of different crepes over the years and love them. I have watched a lot of crepes made on cooking shows and they make it look so easy.................. BUT ITS NOT Maybe my problem was the pan 🙁

  33. The crepes look so delicious! I have always heard that crepes were very difficult to make because it was impossible to get the consistency of the batter correct. Then they said that if the consistency wasn't right, the crepes wouldn't be thin enough. Your crepes look perfect. My son has been cooking for me since I can't get around very well, so I am going to ask him to give them a try. I will let you know how they turn out! Thanks for sharing your recipe.
