Easy Soy Sauce Chicken with Garlic and Ginger
This soy sauce chicken recipe is easy to make, full of flavour and produces tender and scrumptious chicken. The leftovers are just as delicious and are perfect to add to a stir fry or just enjoy with your favourite veggies or on rice. You can make this recipe with drumsticks or chicken thighs! We love treating ourselves to this delicious but oh so easy soy sauce chicken recipe.

What do you serve with Soy Sauce Chicken?
The possibilities are almost endless. We’ve served it with rice and snow peas but it can be served with almost any vegetables! Think bok choy, suey choy, gai lan, broccoli and more. You can also serve with brown rice but you don’t have to have rice. My daughter loves her rice whether it’s brown or white rice whereas I like to have a lot of veggies instead with my soy sauce chicken.
Toppings for Soy Sauce Chicken
This soy sauce chicken doesn’t really need any toppings but as you can see we added green onions which is usually popular. Sesame seeds are another option as well. I personally don’t add any toppings as it has enough flavour and tastes so good with veggies.
Chicken Drumsticks or Thighs?
As we’ve mentioned earlier this recipe works with either and yes we’ve tried it with both. When we did the thighs they were boneless and skinless but just as tasty. They’re also easier for leftovers (if there are any) and you want to cut it up to add to a stir fry which is what we did. The recipe produces flavourful and juicy chicken that everyone can enjoy. You can even make it spicy if you like (which I do) and add some chili flakes to the marinade!
Let’s get to our soy sauce chicken recipe now shall we?
- 1 cup of soy sauce (you can use a low sodium one instead if you prefer)
- 1 -2 tsp grated ginger (to your taste)
- 2 tsp grated garlic
- 3 tbsp hoisin sauce (optional)
- 6-8 chicken drumsticks or 10 chicken thighs
- Rice (optional)
- Veggies to serve on side (I used peas)
- Chili flakes (optional)
- Mix soy sauce, grated ginger and grated garlic until ingredients are incorporated. Add in hoisin if you like and if using chili flakes add at this point too. I find that the hoisin helps to bind and give a nice sheen to the chicken.
- Preheat oven to 375
- Remove chicken and place in a bowl, pour half of the sauce on the chicken and let marinate for a minimum 15 minutes (if you want you can also do this overnight)
- Use a non-stick cooking sheet, or a parchment-lined tray for the chicken.
- Bake at 375°F for 30-40 minutes.
Every 10-15 minutes spread some of the sauce on the chicken to coat. When done the chicken should have an internal temperature of 165°F (74°C)
- Remove and let set for 5 minutes before serving.
Serve with veggies and or rice.
Optional top with green onions or sesame seeds
Keep in mind that all ovens have varying temperatures so keep checking your chicken which you should be doing when you go to coat it with the other half of the marinade every 10-15 minutes.
You can add more ginger and/or garlic if you like a stronger taste. I personally add 3 teaspoons of ginger but not everyone likes that strong of a ginger taste.
Soy chicken that is served in Chinese restaurants always has the skin on but as you see we've added a boneless, skinless option.

Now doesn’t this soy sauce chicken look oh so easy to make?! It really is that easy and simple and you can do a few variations to your taste. I like to add more than 2 teaspoons of ginger as I like a stronger ginger taste but I’ve said 1-2 teaspoons for those who like it milder but you can adjust to your preferences.
