I don't know about you but some days I'm just so darn tired from work, running around and all that comes with being a working mom that it can be a bit of an effort to get on the table a tasty but healthy dinner. Well when I discovered this particular chicken recipe from Canadian Living I was over the moon when we first tried it as it really is an easy and tasty chicken recipe that you can also modify to suit you and your family's taste buds!

Here's a picture of the finished product that I served over soba noodles but it's absolutely delicious with brown rice or really anything you want!

Easy and Tasty Chicken Recipe

Now I admit that once I've done a "recipe" a few times I generally don't follow measurements as I cook it to suit our needs and family size so I apologize if the measurements are not exact. You can easily adjust to make more or less and with these ingredients you really don't have to worry about how much of each as it will taste good no matter what I'm sure!

Here's what I do:

  • 4 boneless & skinless chicken breasts
  • 1 cup of white wine (or white cooking wine, red will do in a pinch too)
  • 2 cups of baby spinach
  • 1 teaspoon crushed garlic
  • 2 cups of mushrooms (crimini, portabello, or white) - optional
  • chopped onions - optional (I don't use but the original recipe called for it)

Directions

Bake chicken breasts with a bit of olive oil on them and if wanted a bit of sea salt and pepper for 20 minutes max on 350 degrees. It's okay if there still a bit pink inside don't worry they'll get cooked. Take out and set aside.

I love mushrooms so I always add it to this recipe. Saute mushrooms with garlic and some salt and pepper

Set aside mushrooms (if you don't want it mixed in) and using the same pan add the spinach and a little bit more garlic and mix around until spinach is wilted.

Add half of the white wine. Cut up the chicken and add that to the spinach and cook for a bit (about 5 minutes) then add the rest of the white wine. Cook until chicken is cooked all the way through doesn't take long.

You can either add the mushrooms in at this time and mix it up or add them on top of the finished product up to you. I leave the mushrooms in as you can see above and mix it up so it gets some of the amazing flavoring from the wine.

Serve over rice, noodles, with potatoes or whatever you want. It is so yummy and after you've made it at least once it's so easy to make and quite quick! Hope you all enjoy it and feel free to share your favorite easy and tasty recipes 🙂

  5. I want to try this recipe, looks good. I tried soba noodles for the 1st time a couple days ago. I liked them. They seemed a little different but I liked them. Now I want to try more recipes with the soba noodles.

  6. THIS is exactly the kind of recipe I look for: healthy but savory and something I know my husband will genuinely love!

    I took me about 15 years to get him to TRY Soba noodles - but now he loves them - the flavor and texture. All Summer long I've been making Soba Noodle Salads (served cold or at room temperature - and usually with lots of raw fresh veggies (and an occasional splurge on sushi grade tuna!)

    I guess I hadn't really even thought about serving it hot and with ALL of my favorites: garlic, mushrooms, sprinach and chicken - and I often find that a splash of white wine really makes a dish sing!

  8. Oh, my! This looks great. We eat a lot of chicken and I'm constantly looking for new ways to prepare it. This recipe looks like it would be adaptable to use other fresh veg, as well. Thanks for the inspiration.

  13. I like to find chicken recipes. This one sounds good . Only thing I will change is the wine. I dont care for the taste of wine, So I would use chicken broth instead. Other than that is all yummy to me

  19. Looks delicious! I usually keep baked chicken breast in ziplock bags in the freezer, either whole or cubed. I watch for sales and stock up. There are so many delicious and super fast ways to use them in a meal! Your recipe is great, and super healthy besides. Thanks.

  27. This is a great and healthy dish! Its also versitile...Take the chicken out and add more veggies for a great no meat dish or add sausage instead of chicken..love it !

  28. Not only am I worn out some (all) nights, but I am a terrible cook, this looks like I could handle it. I like that you used the Soba noodles, I just had them at Panera for the 1st time and they're great. The baby spinach & garlic is healthy too-thanks for the recipe!
