I’m Michelle aka Powered by Mom. I’m married with one daughter, my hubby was my high school sweetheart, our two dogs Nyx and Cleo and our cat Oliver. As you can see we’re a family of animal lovers. We love to travel when we can, try different food and activities all over the world and enjoy being together. My passions are writing, travelling, creating new recipes, encouraging people to adopt not shop and just to enjoy life while we can.

As an animal lover I also volunteer with a rescue organization called Three Little Pitties All Breed Rescue. I'm part of the cat program Three Little Kitties Saving Kitties which tries to save as many cats as possible in Houston, Texas which has a huge overpopulation fo cats and they euthanize far too many cats (and dogs) we want to change that.     Broccoli – I usually steam it but many times we treat ourselves to the prepackaged Broccoli with Cheese Sauce – always a welcome in this home by all of us! LOL

    My favorite vegetable would be the long green beans. I serve them in a soup we cook called sinigang or just sautee it in garlic and onion and just put a bit of toyomansi and water in it. 🙂

    I love veggies. I love squashes, broccoli, cauliflower, almost any of them! I like baked acorn squash with a tiny bit of real butter, maple syrup and brown sugar. I like spaghetti squash with a small amount of real butter, parmesan cheese and sundried tomatoes. I have a good recipe for almost all veggies, but okra is just best fried (which I know isn’t really healthy, but sometimes we just have to eat what we crave.

    It’s hard to pick just one!!! I love green beans and corn on the cob! Also, greens, spinach and collards cooked together with bacon and onions is wonderful and so healthy!

    My fave vegetable is potatoes I make them mashed, fried (with onion and green peppers), baked, scalloped, in soup, as french fries and probably more ways I can’t think of at the moment. I love most vegies so this one was tough.

    Maybe it’s expensive enough that we don’t have it all the time and that’s why the family enjoys it more

    I LOVE broccoli! I like to spread florets on a baking sheet, drizzle with EVOO, sprinkle salt and pepper, and put it in the oven to bake/roast. It’s SO yummy!

    Peas are my favorite and I will eat them any way they are made. My grandmother used to make them in a cream sauce and I can’t imagine that was healthy, but I’ve never made them that way.

    My favorite is broccoli, I made a dish called chicken vicious that is super spicy and it calls for peas but I use frozen broccoli in it and put in tons- it makes the meal! Love it!

    I like Broccoli and Cauliflower sprinkled with some garlic powder (or salt) cooked in the oven for around 10-15 minutes, with cheese sprinkled on top after out of the oven!

Happy #Easter everyone. Hubby & I went camping and Happy #Easter everyone. Hubby & I went camping and just got back. We took both of our dogs with us and we think we broke them 😆 #CleoTheDog & #NyxTheDog were both soooo tired by around 8:30pm each night that they would go to our trailer door & look at ys waiting to be let in 😁 while we continued to enjoy our campfire 🔥It was great to unplug there is no cell service let alone internet where we go so we enjoyed the beautiful scenery. We are lucky to live in #BeautifulBC.
