Easy and Healthy Honey Lemon Chicken Stir Fry Recipe

Can't decide what to make for dinner? This healthy honey lemon chicken stir fry recipe is easy to make and oh so delicious. Grab whatever vegetables you have in the fridge and cook up some chicken and before you know it you will have a yummy complete meal.

Honey Lemon Chicken Stir Fry - Easy to make and versatile

A stir fry is so versatile, you can use whatever vegetables you have on hand and if you made chicken the evening before you can use the leftovers or start with a new batch. We only buy Chicken Raised by a Canadian Farmer

We're fortunate that our local grocery stores carry chicken raised by a Canadian farmer. We can easily spot it by looking for the Raised By a Canadian Farmer logo which you can see below. Not everyone is as lucky though as it's not in all stores yet, but we're hoping to see more stores get on board and carry it. For myself and my family it's important for us to know where our chicken is coming from.

There are oh so many reasons why we will only buy chicken raised by a Canadian farmer and we explain in detail more about it on our Honey Balsamic Chicken Recipe post as well we share the different chicken farming methods. One of the many reasons is that we can rest easy that we are getting top quality chicken. As we've mentioned before all Canadian chicken is grain-fed and free of hormones and steroids and has been since the 1960s. It's knowing that such nationally-set standards are in place for mandatory food safety and animal care standards. We can buy our chicken with raised by Canadian farmer logo and not have to worry about the quality of what we're eating.

Honey Lemon Chicken Stir Fry with Wild Rice

Now let's get to this delicious honey lemon chicken stir fry shall we?

Yield: 4 servings

Honey Lemon Chicken Stir Fry

Honey Lemon Chicken Stir Fry
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 2 tbsp. cooking oil
  • 2 medium-large boneless, skinless chicken breast, cut into strips
  • 1 large red bell pepper, cut into strips
  • ½ large yellow bell pepper, cut into strips
  • ½ cup Shoestring carrots
  • 1 heaping cup broccoli florets (can use fresh or frozen - allowed to thaw)
  • ½ can baby corn
  • 4 tbls. honey
  • ¼ tsp. garlic powder (or 2 cloves, grated)
  • 2 teaspoon ginger powder
  • 4 tbsp. soy sauce
  • ⅔ cup chicken broth
  • 3 tsp. sriracha
  • 2 average sized lemons, juiced
  • ½ cup water
  • 2tbsp. cornstarch
  • Salt and pepper, to taste

Instructions

  1. Cut the bell peppers into strips and place with the broccoli, carrots, and baby corn. Set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper.
  3. Add the chicken to the skillet or wok and stir fry until cooked through - approximately 5 minutes.
  4. In a small bowl mix honey, garlic powder, ginger powder, soy sauce, chicken broth, sriracha, and lemon juice.
  5. In a separate small bowl, or measuring cup, mix water and corn starch. Once thoroughly mixed, pour the water and cornstarch mixture into the honey mixture. Stir well until combined. Set aside.
  6. Add the vegetables: red and yellow bell peppers, carrots, broccoli florets, and baby corn to the skillet with the chicken. Stir fry for approximately 5 minutes or until the peppers are tender.
  7. Stir the sauce and add to the skillet, making sure to coat the chicken and vegetables. Cook on high heat and allow the sauce to come to a bubbling boil. The sauce will quickly begin to thicken. Turn down to medium heat and cook for 1-2 minutes, stirring continuously to coat the chicken and vegetables.
  8. Serve as is, over/with rice, or quinoa. For this recipe we served it with long-grain wild rice.

Notes

Vegetables can be substituted with your favorites such as asparagus, zucchini, mushrooms, etc.

Recipe is easy to cut in half or multiply

If you're lucky enough for leftovers, warm and serve in a warmed pita pocket, or tortilla, for a tasty lunch!

What did I tell you easy peasy and oh so yummy right, is your mouth watering a little bit for this honey lemon chicken stir fry? It has a nice light tangy and sweet taste. You could also make it spicy if you wanted by adding some peppers or sriracha. I like to add some freshly ground pepper when I'm read to serve and I eat it without the rice but my family likes it with rice.

  2. I pinned this recipe before even coming down to comment-- and to say "thank you" for posting what looks to be an amazing recipe!
    I'm really looking forward to making this dish. I have a family member who works late hours, and every now and then grabs some Chinese take-out on the way home. He tries to choose the healthier options, but we're still like "Hmm..." :p I'm excited to make a good meal with fresh ingredients... and, to use and try Sriracha for the first time!

  3. Ohh myyy god. I'm actually drooling as I look at the pictures of this delicious sounding food. I've never been big on stir fry type of meals, but wow, this one sounds absolutely amazing. Plus, it sounds rather easy to make, too. We'd definitely substitute a few things. I definitely need to pick up the ingredients to make this!
