Paleo Butternut Squash Soup Recipe

Ingredients

  • 1 small Butternut Squash, peeled and cubed (about 8 cups of cubed butternut squash)
  • 1 medium sized Onion, diced
  • 1 teaspoon of Garlic Powder
  • ½ teaspoon of Cinnamon
  • 1 teaspoon of Ground Ginger
  • ½ teaspoon of Chili Powder
  • ½ teaspoon of Ground Clove
  • Salt and Pepper
  • 4 cups of Chicken or Vegetable Broth
  • 1 cup of Coconut Milk
  • 2 tablespoons of Olive Oil

Instructions

  1. Preheat the oven to 400 F. Line a baking sheet with foil and grease it.
  2. Dump the cubed butternut squash in a single layer. Season with salt and pepper and a light drizzle of olive oil. Bake for 25 to 30 minute, or till the squash is tender and slightly charred.
  3. Meanwhile, in a large soup pot, heat 2 tablespoons of olive oil over medium high heat. Add the onion and sauté it till translucent.
  4. Add the spices - garlic powder, ground ginger, cinnamon, clove and chili powder, salt and pepper, and sauté for another minute.
  5. Next add the roasted butternut squash, half the broth and coconut milk. Let it all simmer for 5 minutes.
  6. Puree the soup using a stick/immersion blender. Or puree it in batches, using a regular blender or food processor.
  7. Return the blended soup to medium heat. Check and adjust seasoning.
  8. Add the remaining broth and coconut milk and let it simmer for 3 to 4 minutes, till it is smooth and creamy.
  9. Serve hot with and splash of coconut cream (thick coconut milk also works) and toasted pepitas and fresh herbs of choice.

Notes

Instead of butternut squash, sweet potatoes or pumpkin can be substituted.
For a delicious smoky flavor, use smoked paprika or chipotle peppers, instead of chili powder.

  3. I love butternut squash but oddly enough have never made it into soup. I think this would be a nice meal with crusty bread or a sandwich. It looks so good.

This is so amazing to me coming from a family of chicken and tomatoe soup only I've never even tried butternut squash and this looks so delicious I'm hopeful that I can provide a more interesting bigger more comforting menu to my son than what was offered to me as a child I want him to have a happy life

  10. Love butternut squash but hate to cut it up. But I have found it in the frozen food section so I use it more often now. Yes I do give in and buy the smaller one which are easier to cut up. This looks so easy and simple that i would fix today but no coconut milk on hand. And thanks for letting us know that this freezes well. I am a senior so I like to fix a nice size batch of soups/chili and freeze in ziplock bags.

  12. I love a good squash soup but, unfortunately, my kids don't. About the only thing they all agree on and the only thing they won't eat. They love squash but, not soup LOL. I may be doing up a big batch of this for myself to eat at work LOL

  16. I've been looking for a good butternut squash soup recipe. This looks like it will work, minus the cinnamon that I am allergic to. I love adding the pumpkin seeds to it to give it a little crunch too.
