Do you need an idea for a Quick and Easy Dinner Meal?
If you are like most people sometimes you get so tired that you just do not feel like cooking a big meal when you get home from work. Sometimes we all need to step back and breathe and take a little break from cooking a huge meal. There are several quick and easy meals that you make that won’t break the bank and you will have plenty of time to relax before bedtime.
Canned fish or canned corned beef is an easy dinnertime meal. These products can be bought from the grocery store. Canned mackerel is much better for you than tuna or use red sockeye salmon instead. Better yet if you freeze any left over fish or meats those are even better for you than canned.Have some Uncle Ben’s Instant Rice on hand, some potatoes, tomatoes, onions, garlic, and spices and you have a fast, nutritional, budget=friendly dinner on the table in less than twenty minutes. Just how amazing is that?
Now I know you all want the recipe… right? I am not going to make it that easy as the amount of spices or types of spices you are using is up to you! Just make sure that you have the canned product on hand, some potatoes, tomatoes, and instant rice. Add some coconut or olive oil in a fry pan; add chopped garlic, onion, and tomatoes to the pan. Take a couple of potatoes, scrub them, no need to peel them, as the most important nutrients are just below the skin’s surface. Cube the potatoes into small pieces (similar to the size of hash browns. Sauté vegetables to almost tender and then open the canned fish or canned meat product that you wish to use and add it to the vegetable mixture. Fry over low heat until well mixed. You may have to add a little water to form a little liquid so it does not stick to the pan. For those of you who like spicy food, you can add a tiny bit of curry to the veggies as they are frying.
Measure out the amount of instant rice that you will need and make as usual.
Now you have a quick and easy meal that is ready in approximately 20 minutes or less.
Things to keep in mind if you do use canned fish get a low sodium one and use only the ones in water not oil
