Red Velvet Truffles Recipe

Enjoy a delicious treat – Red Velvet Truffles

We love yummy treats and these Red Velvet Truffles are no exception! Easy to make but they look so good everyone will think you bought them from a specialty store.

Enjoy these delicious Red Velvet Truffles for Valentine’s Day or really all year long. They are easy to make, oh so yummy and they look great to serve to your loved ones, guests or at parties. You can even switch them up with different cake batters to go with the occasion, so many choices for these tasty truffles. You can also top them with chocolate flakes, coconut, sprinkles or whatever your heart desires.

Ingredients

  • 1 Box Red Velvet Cake Mix (plus ingredients listed on the box to make the cake)
  • 8 oz cream cheese, softened
  • 16–20 oz white melting chocolate
  • 2 oz dark chocolate

Instructions

  1. Preheat oven according to directions on cake mix box.
  2. Prepare a 9 x 13 inch cake pan by spraying with cooking spray. Prepare the cake and bake according to instructions on the box. Allow the cake to cool completely. Then, using your hands, crumble the cake in a large bowl.
  3. Add the softened cream cheese to the crumbled cake. Using your fingers, gently but fully, incorporate the softened cream cheese.
  4. Line a cookie sheet with wax or parchment paper.
  5. Scoop out a heaping tablespoon of the cake mixture and roll in your hands, making a ball. Place on cookie sheet. Repeat until all the cake mix is used. (I got 35 balls).
  6. Insert a toothpick into each cake ball and set the cookie sheet in the refrigerator to chill.
  7. While the cake balls are chilling, melt white chocolate. You can use the microwave or a double boiler for this. I prefer to use a double boiler, as it keeps the chocolate smooth and at the right consistency. With the microwave method, you may have to reheat at intervals to keep it consistent.
  8. Remove cake balls form the fridge. While holding the toothpick, dip into the melted chocolate. Gently tap the hand holding the toothpick with your other hand to remove excess chocolate. Sit each cake ball back on the wax paper and set them back in the fridge until chocolate is firm.
  9. Gently remove the toothpicks. You can cover the hole in the next step.
  10. In a small plastic baggie, melt the dark chocolate in the microwave. Cut a VERY small tip off one corner of the bag. As an alternative, I like using a toothpick to prick a small hole in the corner of the bag.
  11. Pipe the melted dark chocolate across the tops of the truffles. For a fun twist, you can also use sprinkles or colored sugar!
  12. Store in refrigerator.

    I have not had a cake ball before, but I have seen them. I never knew how to do them. it makes sense, but I never realized it was squished cake. Now I want to try them even more. They look amazing.

Instagram post 2187378363463484823_502869795 It is with great sadness and through tears that I write that we just lost our beloved Apollo. He was hit by a car and didn't make it. We've never lost a pet this way and so early, all of them had been with us for 10 years or more, Apollo was only with us for over a year. He was a special boy, so sweet and crazy at the same time, such a character.

We are all beyond devastated, especially my husband as we lost our  beloved Luna (she was 15 years old & his constant companion like Apollo) just this past February, to make it even harder he had to go back to work right after losing Apollo this morning.

I'm sharing this horrible news because I will be offline for the rest of the week as we try to deal with this loss and our emotions.

I like to think that Luna, Little Zeus, Juno and Zeus are all welcoming Apollo over the Rainbow Ridge even though it was far too soon for him to go.
