I adore and I do mean adore apple pie and cheesecake so naturally, I had to combine them. Then I thought better yet caramel sauce because you know caramel apple pie is so yummy but cheesecake. You kind of get the idea of how my mind works and why I had to make this salted caramel apple cheesecake bar recipe. It satisfies my love for apple pie, caramel and cheesecake, some sweet some salty all in one recipe, what could be better?salted caramel apple cheesecake barsI also love that these salted caramel apple cheesecake bars can be perfect for the holiday season, you could even add some cranberries on top but it's also yummy all year long.

Salted Caramel Apple Cheesecake Bars Recipe

Salted Caramel Apple Cheesecake Bars

Salted caramel apple cheesecake bars are a little piece of heaven. A little sweet a little salty all delicious. Perfect for any occasion.

Prep Time 20 minutes
Cook Time 40 minutes
Total Time 1 hour

Ingredients

For the crust:

  • 2 cups cinnamon graham cracker crumbs
  • ½ cup unsalted butter melted
  • ½ cup granulated sugar

For the cheesecake layer:

  • 16 ounces cream cheese softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs lightly beaten

For the spiced apples:

  • 2 large granny smith apples peeled and finely chopped
  • 2 tablespoon brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

For the streusel topping:

  • 1 ½ cup all-purpose flour
  • ½ cup granulated sugar
  • ⅓ cup light brown sugar
  • ½ cup cold unsalted butter cubed
  • ½ teaspoon cinnamon
  • ⅓ cup salted caramel sauce

Instructions

  1. Preheat oven to 350 degrees and grease a 9x13-baking pan with baking spray. Set aside.
  2. Combine the graham cracker crumbs, melted butter, and sugar with a rubber spatula, then press mixture into the bottom of the pan until tight and compact.
  3. Pre-bake the crust for 8 minutes.
  4. While the crust is baking make the cheesecake layer: In the bowl of a stand mixer fitted with the paddle attachment, beat together the cream cheese, sugar, and vanilla on medium speed until smooth, about 1-2 minutes.
  5. Add the eggs and beat on low speed until just combined. Spread over the slightly cooled crust.
  6. In another medium-sized bowl, combine the apples, brown sugar, cinnamon, and nutmeg. Toss until all the apple pieces are evenly coated, then spread over the cheesecake mixture.

For the streusel topping

  1. In the bowl of a stand mixer fitted with the paddle attachment, or handheld mixer, beat the flour, sugars, cubed butter, and cinnamon together until you have a crumbly mixture, about 2-3 minutes. Distribute streusel evenly over apples.
  2. Bake for 30-35 minutes or until filling is set. Drizzle with salted caramel sauce and let cool in pan on a wire rack for 1 hour. Then transfer pan to the fridge and cool for at least 3 hours. Cut into bars.

  3. This is one of those dessert that I call a mouth dessert. I know sounds strange but when your forks sinks into and heads to your mouth. The first thing you taste is the crust but then it is the cheesecake with a taste of apple, with touches of caramel sauce. It taste so good............................ will the next bite taste a good.........

Ok so this has got to be one of the most beautiful things to ever exist lol I'm moving and can't utilize my kitchen right now but I just now took screenshots of the entire recipe because this is the first thing I'm going to make when I get into my new apartment in the beginning of February my husband thinks this is phenomenal too I have to have these they look so divine so perfect I feel like I want to pair it with ice cream and top it with whip cream this would be so amazing to have also another version what about peach and blueberries oh my gosh that would be so good and maybe strawberry topping but I love Caramel so much I'd still even use Caramel topping with peach and blueberries

  32. I HAD to pin the Salted Caramel Apple Cheesecake Bars Recipe! Even the name makes me hungry & gives me comfort! There is no way that I would add cranberries to this recipe! I wouldn’t want the cranberries or anything else to take or cover up the original natural flavor of this delicious recipe.
