Taco Night Casserole Makes for an Easy Dinner
Need a quick dinner that EVERYONE will love? Want to make something that you WON’T have leftovers to clean up? Taco Night Casserole will be just that, a perfect dinner.
Taco Night Casserole Recipe
Ingredients
- 1 jar of salsa (your favorite)
- flour tortillas
- 1-1 ½ pounds ground beef
- 1 package of Taco Seasoning
- 1 can of refried beans
- 1 package of shredded cheese
- 1 package of heat and eat Spanish Rice
- sour cream
- lettuce
- tomatoes
Instructions
- Brown the ground beef and after straining off the fat, add the taco seasoning and prepare according to the package.
- Layer your salsa, tortilla, beans, rice, meat and cheese in a glass casserole dish until it reaches the top. (Top layer should be cheese)
- Bake casserole at 350 degrees until the cheese is bubbly, approximately 10 minutes
- Serve with lettuce, tomato and sour cream

Taco Night Casserole…what can I say about it except it’s easy, delicious, and your whole family will devour it. It really is the easiest dinner you will make all week. It takes Taco Tuesday to a different level.
My family loves tacos…except my husband. He just doesn’t, for some reason, like a taco. So, in order to fancy it up a little, I decided that I would make a layered dinner out of taco ingredients. To my AMAZING surprise, it was very well received.
I took salsa and put it on the bottom of my casserole dish. I love tomatoes, so the more there are of them, the better. On top of the salsa, I put a flour tortilla. The size of this thing really matters because if you have one that is too big or too small for your pan, it’s not going to layer right. I like the smaller ones because i use a 9 x 9 glass baking dish for this and I don’t have leftovers.
Smear on as much refried beans as you like. I used just a typical spreader for this step. There’s not much at all to it. Layer in your Spanish rice next. I am not a rice cooker…so I bought the Spanish Rice in a pouch that you microwave. It works so good! You don’t even have to add water.
Then I added my seasoned meat and cheese. I would make about a pound and a half (if you’re using beef). For the seasoned meat, use whatever you typically use to make tacos out of. I know there are recipes for chicken you can make in the slow cooker and that would be so good in this. But, I used beef and taco seasoning. And for the cheese, the more the merrier! Use your favorite.
Make at least 3 layers of this. That way you will have a hearty dinner and everyone is satisfied. Bake in your oven at 350 degrees until the cheese is bubbly. Serve with lettuce, tomatoes and sour cream. Its like the salad is on the side, or you can mix it all up. Totally up to you.
Like a lot of my recipes, I use what my family eats. If you want to add fresh peppers or guacamole to this, please do so. Make it how you like. That’s what is fun about cooking at home. You don’t have to explain anything. You just create. Enjoy this dinner and use the extra time to hang out with your family.
